Cheese Scones

Ingredients:

  • 500g self raising flour
  • 120g soft butter
  • 160g grated mature Cheddar cheese
  • 1 teaspoon mustard powder
  • pinch of salt
  • approx 250 ml milk
  • Method

    Pre heat the oven to 200C/ Gas Mark 6.

    Sift the flour, mustard powder and salt in a large mixing bowl.

    Add the butter in chunks and rub in until the mixture resembles breadcrumbs.

    (shaking the bowl from side to side will bring any unrubbed lumps to the surface)

    Stir in the grated cheddar, reserving a little to scatter over the scones before they go in the oven.

    Add enough milk to the dry ingredients in order to turn the mix into a soft dough.

    Pull the dough together into a ball and turn out onto a lightly floured surface.

    Roll gently to about 3 cm thickness and stamp out rounds with a cutter of about 5cm in diameter. You choose what size you fancy.

    Arrange the scones onto a greased and lined baking tray and brush the tops with a little milk.

    Place in the pre-heated oven and bake for 25 minutes or until golden.

    Cool on a wire rack.
